Amazing bake. You can really see the toasted barley as it didn’t lose its integrity like the untoasted oatmeal did. The crumb is very open , tender and cool . The toasted barley fragrance yesterday when it came out of the oven was remarkable. The flavor comes through as well. The crust is soft this morning but that’s to be expected due to the high hydration. I am really pleased with this one. Will continue the exploration when I get to the spelt next.
