I took Sopa De Ajo and flipped the seasonings to make it Italian. Negated the eggs as well. It’s basically shaved garlic roasted in a pan and deglazed with white wine. Add your chicken stock and let simmer while you make the croutons. I used melted butter, Italian oregano, ground basil, parsley, and Parmesan cheese. Slightly toasted so they’re not too crunchy. Plate like French onion. I used the broiler to melt extra parm on top. Garnish with more fresh parsley and enjoy.
