The West African combination of tomatoes and peanut butter is phenomenal. That said, this batch does not pretend to be authentic, as it uses shortcuts, stuff I bought on sale (even the cast iron pot from Aldi was on clearance), and substitutions such as PB2. The entire 5.5-quart pot would be 1306 calories. If it weren’t so filling, I would be tempted to finish it off. As it is, the following made 6 portions.
1 14-oz can diced tomatoes
1 28-oz jar spicy red pepper sauce (Classico)
2 cups water to rinse out jar/can
1 packet onion soup mix
6 tbsp PB2
1 tsp red pepper flakes
1 cup cooked chick peas
1 large sweet potato
3 cups chopped greens
Combine all ingredients except for greens and simmer on medium heat until sweet potato cubes are soft enough to cut with a spoon. Add chopped greens, cover, and simmer till very wilted.
