Considering that I have t-shirts that profess my love for both tacos and avocados, it’s a pretty safe bet that I get fully on board with Taco Tuesday. But, to be totally honest, any day could be taco day around here, and some weeks, it’s everyday! Making tacos gives you so many options that your sure to find something everyone will love. I love beef tacos, shrimp tacos, mahi-mahi tacos but chicken has always been a bit elusive for me, until now. I’ve finally found a tried and true way to make chicken tacos that I actually love! These Slow Cooker Cilantro Lime Chicken Tacos are insanely easy and so totally juicy and full of flavor, they are bound to turn anyone into a chicken taco fan!
I actually started working on this recipe a while back, but never quite got around to finishing it off to share because my life has just been kinda crazy like that lately. But when Amy from Beautifully Broken Journey (and also my neighbor and business partner!) asked me to work with her to make some recipes for the Fiesta Freestyle she was invited to host as a Weight Watchers ambassador, I knew these would be perfect!! We served these on Fiesta Flats but you could use whatever you prefer!
