Slow Cooker Coffee Cake
I remember being a little girl accompanying my mom to her friend’s house and we were served coffee cake. I had never heard of coffee cake and was puzzled by the term. Was it a cake with coffee in it? No, just a delicious breakfast cake with a cinnamon streusel topping. I was in love!
Because today is National Coffee Cake day…yes that’s a thing…I decided to see how it would work if I made a coffee cake in the slow cooker. My family went bonkers over this cake and it was demolished in about 5 minutes.
Because this cake is slow cooked instead of baked you don’t get the crunchy streusel topping that you would on a normal coffee cake. What happens is that the cinnamon topping actually gets absorbed into the cake and flavors it. It is truly delightful…although not a typical coffee cake. If you’re entertaining and need the oven for something else or simply don’t want to turn your oven on you should make this slow cooker coffee cake. I think you’ll love it!

What Slow Cooker Did You Use?
To make slow cooker coffee cake I used my 6 quart oval Kitchenaid slow cooker.* I love this slow cooker (you can see me talking about it in a video here). It cooks low and evenly. I love the medium heat choice because most slow cookers that I’ve seen only have the option of cooking on low or high. If you’re going to buy just one slow cooker, this is the one that I recommend.

- 1/2 cup white sugar
- 1/4 cup flour
- 1/4 cup butter, softened
- 1 tsp cinnamon
- 1 1/2 cups flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 3/4 cup sugar
- 1/3 cup butter, melted
- 1/2 cup milk
- 1 tsp vanilla
- Grease your 6 quart slow cooker or spray with non-stick cooking spray.
- Make crumb topping: In a small bowl combine sugar, flour, butter and cinnamon. Mix lightly with fork until crumbly; set aside.
- Make batter: mix flour with baking powder and salt; set aside. In medium bowl, beat egg with a whisk until frothy. Then beat in sugar and melted butter until well combined. Add milk and vanilla. With wooden spoon, beat in flour mixture until well combined. Pour into greased slow cooker.
- Sprinkle the topping evenly over the batter.
- Place a double layer of paper towels on top of the slow cooker. This will prevent the condensation dripping onto the cake. Secure the paper towels in place with the lid.
- Cook on high for 2 hours, test for doneness with a toothpick. Cut, serve and enjoy!
I used my 6 quart oval Kitchenaid slow cooker.*
Alternatively you can make this coffee cake in the oven. Just pour batter into an 8×8 pan. Bake at 375 degrees F for 25 minutes.
