Kevin’s spicy tomato noodle soup
3 cups elbow noodles Half an onion, chopped 1 chopped jalapeño 1/2 cup chopped cilantro 1 can hot Rotel (or regular rotel for less spiciness) 1 can diced tomatoes 3 tbs tomato bullion 1 tbs chopped garlic Oregano Cayenne pepper Garlic salt Salt & pepper Mixed veggies (I used a soup mix, it had okra, small potatoes, , green beans, carrots & Lima beans) Cheddar cheese (put in before ready to serve, fully melting in the pot)
First I put some olive oil in a large pot on high and put in the noodles to brown them, stirring to keep them from getting burned. Then I add the title and tomatoes and then add water and the rest I of the ingredients to all cook together. Bring whole pot to a boil, then reduce to simmer. Wait until noodles get soft, enjoy.
I make this very spicy because that’s what I like, so the jalapeño and hot rotel are optional.
